Hope everyone is staying safe and healthy! Can you believe that it is already June? I know that 2020 has not been the best year, but we will get through this together.
As I write our third blog, I am sitting here and wondering what I am going to have for dinner. I feel like it is getting harder day by day to figure out something new to cook. I can’t be the only one going through this. Each night I think “Tomorrow, I am going to make some delicious dish that I have never made before” and before you know it, I am tired and making something that I have had multiple times before. For me I think biggest problem I have is, not knowing what to cook. By the time I finally decide on something I like, it is too late to make and then I don’t want it the next day. That is why I have decided to share a recipe that I think most will enjoy and you can find all the ingredients right here at Caribbean Supercenter.
Moroccan Meatballs with Couscous and Yogurt Sauce
Ingredients:
Ground Beef (Meat Department), Cilantro(Produce), Egg(Refrigerated section),
Cumin(Aisle 8), Garlic(Aisle 8), Salt(Aisle 8), Pepper(Aisle 8), Cucumber(Produce),
Dill (Produce), Lemon Juice (Aisle 3), Couscous mix (Aisle 5)
Step 1- Put 1 Large Egg, 1 table spoon of Salt, 1 tablespoon of Pepper, 1 chopped Garlic, Chopped Cilantro and mix
Step 2- Add ¾ pound of Ground Beef to mixture and with your hands, mix until all ingredients and form the meatballs.
Step 3 – Put oil in a skillet to heat up and then add meatballs. Cook them until they are golden brown. If your meatballs are drying out, add a little bit of water to the pan and cook until they have been fully cooked. As you are doing this step, put a pot of boiling water on the stove to boil.
Step 4- Add your instant Couscous to the pot of boiling water until your desired texture. To add a little flavor, you can add spices such as Garlic, Onion or mixed vegetables. If you are feeling adventurous you can also make homemade Couscous, but for right now, we will deal with prepackaged.
Step 5- In another mixing boil add Yogurt, half a chopped Cucumber, 2 teaspoons of Lemon Juice, ½ a teaspoon of salt, ½ teaspoon of pepper, and chopped dill and whisk until you get a creamy texture. Finally, add the sauce over the Meatballs and Couscous and enjoy!
